Maitake provides some B vitamins, ergosterol / provitamin D2, magnesium, potassium, calcium, unsaturated fatty acids, phosphatidylserine and other phospholipids, and protein.
Whole-wheat foods also contain high levels of healthy monounsaturated fats, protein and B vitamin.
Most of these molecules are generated during the grinding and malaxation, when active enzymes from the damaged fruit cells come into contact with vulnerable polyunsaturated fatty acids in the green chloroplasts.
